Conchiglioni con verdure al gratin



Un formato di pasta originale che, in verità, abbiamo fatto anche un po' fatica a trovare. La pasta di grano duro di grande formato impiega un po' di più a cuocere rispetto a quella più piccola, tipo i rigatoni. Inoltre, se di buona qualità, tiene molto bene la cottura ed è per questo che è indicata anche in preparazioni come questa, in cui viene ripassata in forno per la gratinatura
Abbiamo ripieno i nostri conchiglioni con verdure fresche, appena sbollentate, che naturalmente potete sostituire con quelle di stagione, infatti questa ricetta si adatta molto bene qualsiasi tipo di verdura
Per il gratin invece abbiamo utilizzato la nostra solita besciamella light. Insomma il risultato è un piatto leggero, ma che non ha nulla da invidiare alle preparazioni più elaborate e grasse. Fidatevi e fateci sapere che cosa ne pensate!

English. The conchiglioni is a kind of pasta not easy to find. But the research is definitely worthwhile. This big size pasta is made of durum wheat and needs a bit more time then the normal pasta to be perfectly done. Thanks to the durum wheat this kind of pasta is perfect for the double cooking, first boiled then baked. 
We stuffed the conchiglioni (the italian meaning is "big shells") with fresh vegetables: you can change each of the vegetables with others, depending of the season. 
For the gratin we used our light bechamel. The result is a light dish, that can easily match a classic lasagna or other baked pasta dishes. Trust us and let us know what do you think about it! 

EspañolUn formato de pasta original que, en verdad, fue un poco difícil de encontrar. La pasta de trigo duro de gran tamaño requiere un poco más de cocción que la más pequeña, como el rigatoni. Además, si es de buena calidad, se mantiene bien al dente y es por eso que también se indica en preparaciones como esta, donde se vuelve a poner en el horno para ser gratinada
Hemos llenado nuestros conchiglioni con vegetales frescos y ligeramente hervidos, que por supuesto  pueden ser reemplazados por otros estacionales, de hecho, esta receta se adapta muy bien a cualquier tipo de vegetal
Para gratinar, usamos nuestra habitual bechamel lightEn resumen, el resultado es un plato ligero, pero no tiene nada que envidiar a las preparaciones más elaboradas y grasosas. ¡Confía en nosotras y haznos saber lo que piensas!

Winter vegetables roll


When it comes to fall-winter vegetables all of us use to think about something depressing, isn't it? Yes, they are actually a bit sad but you can turn them charming! 
This roll is a kind of savory strudel, simple to make and quite light. It contents a bechamel base, seared vegetables, crunchy nuts and stringy cheese. You can have a piece of it just as it comes out from the oven or you can wait till it's cold. 
You can choose all kind of vegetables you like the most: we got broccolicauliflowermushrooms and pumpkin out of our fridge. Serve this vegetable roll as an appetizer or with an aperitivo or on a buffet dinner: it will be great. And if you will get any leftover, put it into your lunch box, et voilà

Rotolo alle verdure invernali


Avete sempre pensato che le verdure disponibili fra autunno inverno fossero tristi? E allora "accendiamole un po'!
Questo rotolo alle verdure autunnali è molto semplice e leggero. Contiene una base di besciamella, delle verdure appena scottate, noci croccanti e formaggio filante. E' delizioso sia da mangiare appena sfornato, fragrante e caldo, sia tiepido o addirittura freddo, il giorno dopo.
Naturalmente potete anche cambiare le verdure: potete fare di questa ricetta una specie di "svuotafrigo", a seconda di quello che avete da smaltire. Servitelo come antipasto, in accompagnamento a  un aperitivo o in un pranzo o cena a buffet: è l'ideale. E quello che avanza andrà dritto nel cestino del pranzo per il lavoro!

Spring soup - Sopa de primavera (Garmugia)





English. This delicious soup belongs to Tuscany tradition. They made it in Lucca and in Prato.
It is named "Garmugia" but we renamed it "Spring soup" because it contains all the tender vegetables coming between end of March and the beginning of April.
Stop with the monotony of winter cabbages, broccoli, and so on. Welcome to artichokes, asparagus, broad beans, spring onions, peas... What a joy!

Español. Esta sopa pertenece a la tradiciòn toscana, en realidad lo hacen en el Lucchese, pero al parecer también en Prato.
El nombre original es "Garmugia," pero hemos cambiado el nombre en "sopa de primavera", ya que contiene todas las verduras que llegan por primeras a finales de marzo, para romper la monotonìa de la col, el bròcoli y todas las verduras del invierno: alcachofas, espàrragos, frijoles, guisantes, cebollas frescas ... Una delicia!


English. We made both the soup and a free remake of ours, a pasta version. The result was excellent, indeed. Furthermore we have to say that original recipe provides meat, but we chose not to use meat. We limited the protein to pancetta.

Español. Hemos hecho tanto la sopa como un remake, con la pasta. Y el resultado no fue nada malo! Por otra parte, en la receta original tiene también de la carne, pero nosotras no la hemos añadido, prefiriendo limitarnos al tocino, para el consumo de proteìnas.

Serves 4 - ingredientes para 4 personas:

  • 100 g diced pancetta or bacon - 100 g de tocino en cubitos
  • 200 g peeled broad beans - 200 g de habas sin càscara
  • 200 g peeled peas - 200 g de arvejas sin càscara
  • 2 big artichokes or 4 small ones - 2 alcachofas grandes o 4 pequeñas
  • 200 g asparagus - 200 g de espàrragos
  • 4/5 spring onions - 4/5 cebollines verdes
  • 1 lemon - 1 limòn
  • some prigs of thyme or lemon thyme - algunos ramitos de timo o timo limòn
  • sea salt, extravirgin olive oil, black pepper fresh ground, 8 slices pagnotta - sal, aceite virgin extra, pimiento negra, 8 tajadas de pan casero
  • for the pasta dish: 200 g short pasta - para la sopa con pasta: 200 g de pasta corta

Difficulty: easy - Time: 45 minutes
Dificultad: facil - Tiempo: 45 minutos


English. Clean the artichokes. Throw away the harder leaves and the eventual inner fluff. Soak in water with squeezed lemon, so they do not darken. Clean and chop even the spring onions. Clean the asparagus and divide the tips from the rest. Someone prefer to peel the broad beans at all: instead we kept the skin. You can do as you like.

Español. Limpiar las alcachofas quitando las hojas exteriores duras y cualquier "pelusa" interna. Pasar en agua acidulada con vinagre o limòn para que no se vuelvan negras. Limpiar y picar las cebollas también. Separar los tallos de espàrragos de las puntas. Algunos prefieren quitar la càscara a las habas: nosotras hemos preferido tenerlas, ustedes hagan como prefieran.


English. Place the chopped pancetta in a large skillet. Make it cook on very low heat. When it becomes transparent, add the chopped spring onions. 

Español. Poner el tocino en una sartén grande y dejar cocer a fuego muy lento. Cuando el tocino empieza a ser transparente, añadir la cebolla verde picada. 


English. Slightly brown the onions, adding eventually a couple of tablespoons of water. Then add all the vegetables, except the asparagus tips, that you are going to add later. Cover with hot water or vegetable broth. Do not add salt for the moment.

Español. Rehogar suavemente, aseguràndose de que no se quemen. Si fuera necesario, unir un par de cucharadas de agua. A continuaciòn, poner en la sartén todas las verduras excepto las puntas de espàrragos, que se agregan màs adelante. Cubrir con agua caliente o caldo de verduras. No agregue sal por el momento.


English. After ten minutes add the asparagus tips. Try the soup and add salt if needed. We told you to add salt only towards the end of cooking because it may be that pancetta make the soup salty. So it is better to try the soup before adding more salt. So cook for 5 minutes more, then turn off the heat: the soup is ready. Serve with toasted bread slices. Dress with ground black pepper, thyme leaves and a drizzle of extravirgin olive oil.

EspañolDespués de diez minutos, añadir las puntas de espàrragos. Probar y ajustar de sal. Hemos añadimos sal sòlo al final, porqué puede ser que el tocino haga convertir la sopa bastante salada, depende del tipo de tocino que se utilice. Por eso, conviene probar la sopa casi al final y ajustar el sabor. Cocine por 5 minutos, luego apague y la sopa està lista. Servir con rodajas de pan tostado o incluso natural. Sazone con pimienta negra, hojas de tomillo y un chorrito de aceite de oliva.


English. With the same ingredients you have the possibility to make a pasta instead of a soupy dish. The procedure is quite the same. There are only two differences. Brown the pancetta until it gets crispy, then take it out from the pan and set aside. 

EspañolSi se desea hacer la sopa con la pasta, el proceso es màs o menos lo mismo. Sòlo hay dos diferencias. Freìr el tocino hasta que està crujiente, a continuaciòn retirar de la sartén y reservar.


English. Cook pasta al dente and when it is done stir-fry together with the cooked vegetables for a couple of minutes, adding olive oil to turn into an emulsion. Sprinkle with pepper, thyme leaves and a bit of oil more. Serve adding crispy pancetta on the top of the pasta. Et voilà. Which of the two recipes do you prefer: soup or pasta?

Cocer la pasta y cuando està lista, hàgala rehogar junto con las verduras cocidas durante unos minutos, agreguen el aceite, la pimienta, las hojas de tomillo y un chorrito de aceite de oliva y servir, adornando con el tocino crujiente que ha mantenido a un lado antes. Riso alla thailandese

Italiano. Vi va qualcosa di diverso? Allora proviamo un riso alla thailandese. E' una cucina molto apprezzata in tutto il mondo, saporita e al tempo stesso ricca di vegetali e aromi. Alla base ci sono riso, pollo, pesce, ingredienti molto comuni anche nella cucina mediterranea, quindi vicini alla cultura italiana. La differenza sta nell'aggiunta delle spezie e il latte di cocco, sempre molto presenti nei piatti asiatici. Il risultato è un piatto molto profumato, delicato e sapido allo stesso tempo, grazie alla dolcezza del latte di cocco e al carattere deciso delle spezie. Se non trovate la pasta di curry giallo thailandese, usate pure due cucchiaini di polvere. Stesso discorso per il coriandolo: se non lo trovate fresco, potete utilizzare un paio di cucchiaini di polvere, altrimenti usate il prezzemolo tritato: è meno saporito, ma ugualmente profumato. Bene, siete pronti? Ai fornelli!

English. Do you like some thai rice? It is not so usual here in Italy, but is much appreciated in the rest of the world. It is a tasty cuisine, rich of vegetables, spices, based on rice, chicken and fish. For this reason, we can say it is quite similar to mediterranean cuisine, but we (Italians) do not use coconut milk and not so much spices indeed. Anyway, this is really a fragrant, smooth and tasty dish, thanks to the sweetness of the coconut milk and to the strongness of the spices. If you do not find the thai curry paste, you can use the powder instead, as well as if you do not have the coriander, use the powder or some parsley. Are you ready to work? Let's turn the stove on!

Torta di patate e broccoli al sesamo

Italiano. In famiglia c'è chi storce il naso quando portate in tavola i broccoli? Provate a presentarli così, nascosti nel cuore di un purée di patate. Ma già che ci siamo, trasformiamola in una "torta salata", così fa più effetto... Usiamo anche i torsoli dei broccoli, che non vanno mai buttati via, in quanto anch'essi contengono tutte quei buoni elementi che fanno di questi ortaggi grandi alleati per la nostra buona salute. Un po' di sesamo a copertura, dei "nastri" di porro essiccati al microonde, et voilà, Cenerentola è diventata la principessa della tavola! Avete voglia di sperimentarla? Sformatini di verdure tricolori

Italiano. Guardate che colori: direste mai che sono sformati di verdura?
Velocissimi e di sicuro effetto, questi "mattoncini" sono molto versatili: potete usare qualsiasi verdura abbiate in casa.
 Per il verde noi abbiamo usato i broccoli, ma si possono usare fagiolini, asparagi, spinaci, coste, bietole.... Per il giallo, al posto della zucca ci si può mettere la carota o il peperone, per la base, oltre alle patate, si possono usare verze, sedano rapa.... E pensate come ci starebbe bene la barbabietola....
Bisogna stare però attenti a non usare verdure troppo acquose, che non manterrebbero la forma. Insomma: questo è proprio un piatto svuotafrigo, ma con una simile presentazione, non lo si direbbe proprio, vero?

English. Look what beautiful colours! Did you ever say these wonderful loaves are made of vegetables?
These little "bricks" are very quick to prepare and, actually, you can use every kind of vegetables you get in your fridge. 
For green layer we used broccoli, but we could also use green beans, asparagus, spinach, silver beet.... You can use carrots or capsicum instead of squash for the yellow layer. For the base we used potatoes, but you could use zucchini, cabbage, celeriac... You could even use beetroot to get a bright red color! 
Pay attention not to choose vegetables containing high percentage of water, otherwise you could have some problems. This is a smart solution to use any leftovers you get in the fridge, but looking to the presentation above, no one would ever say it, do you agree?

Rápida y muy eficaz, estos "ladrillos" son muy versátiles: se puede usar cualquier verdura que tienen en la nevera.
Para el verde se utilizó el brócoli, però se pueden utilizar judías verdes, espárragos, espinacas, costas, remolacha .... Para el amarillo, en lugar de la calabaza se puede poner la zanahoria o el pimentòn, para la base, además de patatas, se puede utilizar el calabacín, col, apio .... Y pensar cómo se vería bièn la remolacha .... 
Però hay que tener cuidado de no utilizar las verduras que contengan mucha agua, porquè no serà posible mantener la forma. En resùmen: èsto es sólo un plato "vacìa nevera", però con una presentación de èste tipo, ninguno podrìa decirlo!

Mousse di broccoli

Broccoli mousse - Mousse de bròcolis


Italiano. Ecco una salsa veloce e buona, soprattutto se amate i broccoli. Ormai lo sapete quanto fanno bene questi ortaggi. Hanno un odore un po' forte, ma sono davvero grandi alleati nel combattere molti malanni. Questa crema può essere utilizzata come antipasto, servita su crackers o nei cestini vegani (vai alla ricetta) ma è ottima anche per condire una pasta. Provate, non ve ne pentirete! Per la preparazione vi consigliamo di cuocere il broccolo al vapore, se ne avete la possibilità, e di usare anche il gambo, che fa bene ugualmente e, in più, avrete meno scarto. Questa ricetta ci è stata gentilmente concessa da Viviana Lavatelli di ViviChef, come le creme di lupini e di zucca, oltre alla sfoglia vegana.

English. If you love broccoli, don't miss this quick and mouth-watering mousse. Everybody know how healthy are these vegetables: they smell a bit bad, but they are great allied to fight against a lot of diseases. You can have this mousse as an appetizer, on crackers or as filling of our vegan pastry baskets (see related post), but it is yummy with pasta as well. We suggest to steam broccoli, cooking the stalk as well: it is good and you will have less waste. Try also lupins and pumpkin mousses.


Español. Esta ès una salsa rápida y buena, especialmente si les gusta el brócoli. Saben ya lo bueno que son estas verduras. Tienen un olor un pococ fuerte, però en realidad son grandes aliados en la lucha contra muchas enfermedades. Esta crema se puede utilizar como un aperitivo, servido con galletas saladas o en cestas vegana (ver receta), però también es excelente como condimento para la  pasta. Pruébanla, no se arrepentiràn! Para la preparación, se recomienda cocinar el brócoli al vapor, si tienen la oportunidad y también utilizar el tallo, que es bueno también, además, tendrán menos residuos. Gnocchetti di farro con i broccoli

Italiano. Vi piacciono i broccoli? Allora dovete provarli con come condimento per la pasta. Questo sughetto è facile facile e ci vogliono pochissimi ingredienti. Se avete voglia di preparare gli gnocchi freschi, fatelo: ci vuole davvero poco tempo. Altrimenti usate della pasta normale: il risultato sarà ottimo ugualmente. Non vi diremo quanto bene fanno i broccoli alla salute, per questo ci sono i siti dei nutrizionisti: noi ci limitiamo ad apprezzarne la bontà. Li mangiamo in tutti i modi: lessi, gratinati, come contorno, in insalata con le patate lesse per un piatto più sostanzioso. Provateli anche con la pasta e, ricordate: non buttate via l'acqua in cui li avete lessati, ma riutilizzatela per bollire la pasta, che sarà ancora più piena di sapore! Buon appetito.

English. Do you like broccoli? So you have to try them as pasta dressing. This sauce is very simple to prepare and need only a few ingredients. If you like to knead you can do fresh pasta by yourself (it gets not much time, indeed), otherwise use dried pasta, any shape you like. Broccoli are very healthy vegetables, but we do not want to speak about that, because we are not nutritionists or dietologists: we just want to share with you the tastiness of the bĀroccoli! We like to eat broccoli, whatever. Boiled, au gratin, as salad, as dumpling filling as well…. Try them with pasta and remember not to throw away the cooking water: add it at the pasta water, so you’ll save taste and healthy elements. Buon appetito!


Español. ¿Te gusta el brócoli? Entonces usted tiene que probarlo como salsa para pasta. Esta salsa ès muy fácil y se necesitan muy pocos ingredientes. Si deseas preparar los ñoquis frescos, hazlo: se necesita muy poco tiempo. De lo contrario, se puede usar la pasta normal, el resultado será igual de bueno. No vamos a decir lo bueno que sonlos brócolis para la salud, para èsto, existen sitios de nutricionistas: nosotras nos limitamos a apreciar la bondad. Nos los comemos en todas las formas: hervido, al gratén, como guarnición, en ensalada con patatas cocidas para un plato más sustancioso. Pruèbalo también con pasta y, recuerda: no tirar el agua en el que se han hervido, però usala para hervir la pasta, que será aún más sabrosa! Buen provecho.
