Paris-Brest è un grosso
bigné a forma circolare con un ripieno di crema al burro e una copertura di
mandorle croccanti.
Fu inventata alla fine dell'Ottocento da un
pasticciere francese in onore della competizione ciclistica che partiva da
Parigi e arrivava a
Brest, in Bretagna: la sua forma circolare, infatti, voleva essere un tributo alle ruote delle biciclette.
Per il ripieno noi abbiamo scelto una
crema al latte, senza uova, aromatizzata al
caffè e "alleggerita" con della
panna fresca. Una spolverata di
zucchero a velo e la copertura di
mandorle abbrustolite conferiscono al dolce altri meravigliosi sapori.
English. The Paris-Brest is a kind of big, round choux pastry, filled with butter cream and covered by crispy, flaked almonds.
It was a french patissier who invented this cake at the end of the 1800s. He wanted to make a tribute to the cycling race that was run from Paris to Brest, in Bretagne: his shape reminds the wheel of a bycicle.
For the filling we chose a creme-au-lait, without eggs, coffee flavoured, with fresh whipped cream. Then we sprinkled our cake with almonds flakes (that became crispy in the oven) and at last with some icing sugar: divine.
Español. El París-Brest es un gran buñuelo con una forma circular con un relleno de crema de mantequilla y una cubierta de almendras crujientes.
Fue inventado a finales del siglo XIX por un chef de repostería francesa en honor de la competencia de ciclismo que comenzó desde París y llegó a Brest, en Bretaña: su forma circular, de hecho, quería ser un homenaje a las ruedas de las bicicletas.
Para el relleno se optó por una crema con leche, ni huevos, con sabor a café y "aligerada" con la crema fresca. Para la cobertura, hemos utilizado un poco de azúcar en polvo y almendras tostadas que le dan un sabor maravilloso.
