Budìn de pan E/S

English. With this recipe we are going to turn leftover bread into a gooey, caramel flavored pudding.
As you can read, the title is in Spanish: this is because the recipe comes from South America, where Giovanna (one of us Cuoche Clandestine) was born and grown up.
We replayed the recipe adding a small, personal touch: some orange zest. Giovanna sayed that this is one the best Pudìn de pan she ever had. The orange zest add something special.
Well done! So, put the Pudìn into the oven and call friends and family to have a slice of it!

Alfajores / E-S

English. Alfajores are traditional from Argentina as well as other South America countries. They have a flaky consistency. These good looking biscuits are perfect for tea time.
Traditionally alfajores are filled with "dulce de leche" that is a kind of sauce you can get by boiling milk, sugar and vanilla for a long, long time... but do not worry: you can easily buy it at the supermarket!
You can fill the alfajores with the "dulce de leche" or with other sauces like peanut butter, a salty caramel sauce, a chocolate ganache or a hazelnut sauce (Nutella is ok): they will be good the same!

Green samosas - Samosas verdes

English. “Spicy triangular pastry, stuffed, typical of India and Pakistan cuisine. The samosas may be an appetizer or a snack as well”. This is the explanation of the word “samosa” we read on our Indian cook book (credits: La cucina Indiana, Walter Pedrotti, Giunti editore).
Samosas are really easy to make: you need only water, flour and salt. The stuffing is made by vegetables or meat or cheese (like paneer) or whatever you like, then fried.
However, you know how much we like challenges, so....

Coquitos

English. We were sorting out some drawers when we get a box full of old pictures. It was like opening Pandora's box. Memories popped out like the mytological winds and we couldn't give up watching those images. They told us about the sea, palm trees, coconuts and… Coquitos.

Español
.
Coquitos.

Lamingtons (English/Spanish version)

English. January 26th is the Australia Day.
This anniversary celebrates the day when, in 1788, captain Arthur Phillip officially started the English colonisation of that land, beginning from New South Wales. We would like to make a typical aussie dish, but it is quite impossible.
Actually, Australia is a real melting pot, a big, wonderful continent where plenty of different cultures, languages, customs live together. In the "down under" the idea of "traditional cuisine" as we Italians know it, doesn't exist. To be honest, due to the globalization, this concept is getting more abstract by us too...
All over the world the Pavlova cake is recognized as the national australian dessert (even if New Zealander say they invented it!). But we wanted to make an easier dessert, so we decided to make Lamingtons. So, on January 26th, while we will eat our dessert in our warm houses, drinking a hot tea, Australians will have their Lamingtons after a bbq in the backyard or on the beach!
It seems that a French man invented this dessert. It was Armand Gallad, in 1900, in Brisbane. He was cook at local governor's house, Lord Charles Cochrane-Baillie, baron of Lamington.

Hot cross buns

English. Hot cross buns are typically made on Easter in English speaking countries. The white cross on the top is really tres chic, isn't it? It's easy and funny to make, trust us.
Traditionally, people use to add raisins to hot cross buns dough, but raisins do not like our children, so we changed them with chocolate drops and chopped nuts. We got delicious buns!

English. Eat the buns just a few minutes after taking them out of the oven, when they are hot and fragrant. The day after, they become less fragrant, but you can soak them in milk or tea for breakfast, for example. This dough is perfect as a base for a savory version of the buns: do not put sugar, but add cheese and small pieces of cold cuts or vegetables, and that's it.
Just as all the leavened dough, this recipe requires a long time: time for kneading, three hours for leavening, 25 minutes in the oven. Make them on a day you have no dates on your agenda.

  • 300 g high gluten flour + 2 tabsp.
Difficulty: medium - Time: 4 hours (included rising time)
Dificultad: media - Tiempo: 4 horas (con leudado)

English. Place all the powdered ingredients into a wide bowl and mix (flours, spices, sea salt, yeast, sugar). Make a well in the middle of the flours: add the melted butter and the milk (both are to be lukewarm), 2 eggs. Knead until you get a smooth, non sticky dough. Add a bit of flour if necessary.

English. Turn the dough onto a lightly floured work surface and gently stretch it with your hands. Add the chopped nuts and the chocolate drops.

English. Gently knead to combine. Cover with cling film or a damp dish towel and leave the dough rise in a warm place for two hours or until doubled in bulk.

English. After two hours, take the dough and shape 60 grams little balls (we got 14 balls). Help yourself with a food scale: if all the buns have the same weight, they will evenly cook, needing the same cooking time. Line some parchment paper on a baking tray and set the buns at a regular distance one from another. They need one hour leavening.

English. After one hour, beat the last egg with two tablespoon of milk. Brush the mixture on the top of the buns.

English. To make paste for crosses, beat two tablespoons of flour with a couple of tablespoons of water into a little bowl. Add more water to get a sticky, not liquid paste: it has to be like a liquid glue. Put it into a baking paper funnel or a small piping bag fitted with a very small nozzle. Pipe paste into cross over the buns.

English. Bake in preheated oven to 200°C for 10 minutes, then low down the temperature to 160°C. Bake for 15 minutes more. If the buns get quickly brown, cover with an aluminium sheet. While cooking the buns are going to rise again, getting closer on to each other: for this reason you have to choose a tray that fits you buns well, not too large. Separate the buns when they are hot and serve lukewarm. Enjoy!
