Ravioli mortadella & pistachios

English. Kneading fresh pasta makes you happy? So this recipe is for you. But even if you are just beginners you can try to make these ravioli: they are really easy to do. You can both roll out the dough with a rolling pin or a pasta maker. It depends on your experience with it. 
Ravioli are a very versatile kind of pasta: once you learn the basis, you can chose among thousands of stuffings. This time we fill them with mashed potatoes, cheese and mortadella, a kind of Italian cold cuts. We serve the ravioli with a pistachios sauce. The result? Really delicious! Try it.

Los raviolis, son para aquellos que les gusta poner "las manos en pasta". Pero incluso si usted es un principiante puede probar: no son difíciles de hacer. Si usted es ingenioso, puede extender la masa con un rodillo, mientras que si quieres ir a lo seguro, consigue una máquina para la pasta, sirve una básica, con la manivela:  extender la masa serà un juego. 
Los raviolis son un tipo de pasta muy versátil: una vez que aprenda lo básico, se puede variar el relleno con lo que se desee dando espacio a la imaginación. Nosotras los hemos hecho con patatas, queso y mortadela. Los hemos servido con una salsa de pistachos. El resultado? Para chuparse los dedos. Probar para creer!

Ravioli
Mortadella
English. Mortadella is the biggest of all Italian cold cuts, a sort of big salame. It is prepared into cylinders varying in weight from 500 grams to 100 kilos and over! It seems that its name comes from the Roman word "mortarum" that means "mortar". This is because once upon a time people use to crush down pork meat, salt and spices into the mortar. 
The city of Bologna is, indeed, the birthplace of mortadella, which sometimes even Italians, like pretty much the rest of the world, calls “bologna”. But mortadella is actually produced in many Italian regions, from North to Centre Italy. 
To make mortadella pork meat, both lean and fatty, is minced incredibly thin and then it is enriched with little chunks of fat, black pepper grains and pistachio nuts. The resulting mix is stuffed into a natural casing and then cooked, resulting in a very light, delicate pink color. It is the perfect filling for freshly baked bread or focaccia.

La mortadela es un embutido de cerdo típico italiano de grande forma, una especie de salami gigante: los típicos cortes de producción van de 500 gramos a 100 kilos. Parece que su nombre deriva de la palabra latina "mortarum" por la práctica de machacar la carne de cerdo en un mortero, mezclándolas con las especias y la sal. La zona de origen es la boloñesa, tanto es así que en Milán, por ejemplo, los términos "boloña" y "mortadela" son sinónimos. De hecho la mortadela IGP se produce en muchas regiones italianas desde el Norte hacia el Centro. 
La Mortadela se hace con carne de cerdo, mixta grasa y magra, que son picadas muy finamente, luego se mezcla con trozos de manteca de cerdo, granos de pimienta negra, otras especias, ajo, sal y a menudo los pistachos. La carne viene embutida y luego cocida. El resultado es un salami de color rosado, muy suave y fragante. El sándwich o focaccia recién horneado, fragante, relleno de mortadela es la octava maravilla del mundo!


serves 6 - ingredientes para 6 personas
  • 250 g all purpose flour - 250 g de harina
  • 2 big eggs - 2 huevos grandes
  • 450 boiled and mashed potatoes - 450 g de patatas hervidas y aplastada
  • 80 g mortadella finely chopped - 80 g de mortadela picada finamente
  • 50 g parmigiano cheese - 50 g de parmesano rallado
  • 1 teaspoon chopped parsley - 1 cucharadita de perejil picado
  • 1 teasp. chopped thyme - 1 cucharadita de tomillo picado
  • 1 clove of garlic - 1 diente de ajo
  • 100 g salted toasted pistachios - 100 g de pistachos salados y tostados
  • 50 g butter - 50 g de mantequilla
  • 60 g e.v.o.oil + 2 tablespoons - 60 g de aceìte de oliva extravirgen + 2 cucharadas
  • water, sea salt, black pepper, nutmeg to taste - agua, sal, pimienta, nuez moscada, lo que necesite)

English. Place the flour in a large bowl. Make a hole in the middle and put the eggs in there, with a generous pinch of salt, two teaspoons of e.v.o. oil and knead until you get a smooth ball. If the dough is too tough, add some water, a tablespoon at a time, to make it more tender (it may happens if the eggs are small). Cover the dough with clingfilm and let it rest for 30 minutes at least.

En una mesa o en un recipiente (como se prefiere) vierta la harina. En el centro poner los huevos, una pizca generosa de sal, dos cucharadas de aceite y amasar hasta obtener una bola lisa. Si la masa es difícil de trabajar, añadir un poco de agua, una cucharada a la vez, para que sea ponga suave (esto ocurre si utiliza huevos muy pequeños). Cubrir la masa con papel plástico y dejar reposar durante al menos treinta minutos.

Pistacchi

English. Meanwhile you can make the pistachios sauce. Bring to a boil some water and boil 60 grams of pistachios for 3 to 4 minutes. Drain and peel, then put them into the food processor glass together with 60 grams of oil and 20 grams of uncooked pistachios. Mix adding a bit of water at a time, until you get a velvety purée. As you noticed, we use salted pistachios: this is why we do not add salt to the sauce. Taste it and add salt if needed.

Durante este tiempo se puede preparar la salsa de pistachos. Hervir en agua 60 gramos de pistachos durante 3-4 minutos. Escurrir y quitar la piel. Poner los pistachos pelados en el vaso del procesador de alimentos, se añaden 60 g de aceite y 20 g de pistachos avanzado. Comenzado a mezclar: añadir un poco de agua a la vez, hasta obtener una crema suave, pero no líquida. 
Como han notado, hemos utilizado pistachos salados: hemos añadido pistachos salados con su piel, por tanto muy sabrosos, por èsto, no añadir sal a la salsa: probar al final y si es necesario, añadir sal si parece insìpido.



English. Now let's make the filling of the ravioli. Peel the garlic and rub the bottom of a bowl with it. This is to give only the scent of the garlic, without adding it to the stuffing. Put the mashed potatoes into the bowl, the chopped mortadella, the grated parmigiano cheese, the chopped aromatic herbes, a good pinch of salt (about a tablespoon) and a bit of nutmeg powder. Combine well. 

Español.  Ahora, se procede a preparar el relleno. Pelar el ajo y frotar el fondo de un recipiente grande. Esta operación sirve para dar el aroma de ajo sin añadirlo, con el fin de hacer el relleno aromático, pero no exagerado. Coloque en el bol el puré de patatas, la mortadela picada, el queso parmesano rallado,las hierbas aromàticas picadas, una buena pizca de sal (una cucharada) y la nuez moscada rallada. Se mezcla todo bien.


English. Roll out the dough on a floured surface or flat it down with the pasta maker. The pasta sheets must be very thin. The thinnest you can. Make long sheets of dough. Place half a teaspoon of stuffing onto the fresh pasta sheet as shown in the image above. Help yourself with the cutter you are going to use, so that you can take the right distance from one piece of filling to another. Fold the pasta sheet and press down around the filling, to eliminate as much air you can.

Sobre una superficie ligeramente enharinada, extender la masa con un rodillo si es posible, de lo contrario si usted tiene uno, utilice la máquina para hacer la pasta. La masa debe ser lo más fina posible. Estirar largas tiras de masa. Con una cucharadita depositar un poco de relleno en intervalos regulares (hacer la prueba con la plantilla que va a utilizar con el fin de tomar la medida). Doblar la masa sobre sí misma y con la mitad de la mano cerrada, ejercitar un poco de presión alrededor del relleno, a fin de eliminar la mayor cantidad de aire posible.

Ravioli
English. Use your favourite pasta cutter (our was squared) to make ravioli. Pressing down the cutter will seal the pasta and the ravioli will not open while boiling.

Utilice el molde de raviolis preferido (el nuestro era cuadrado) y modelar los raviolis. La presión sobre los bordes del molde, asegurará que la pasta no se abre mientras hierve.


EnglishBring to a boil abundant water. Meanwhile chop the remaining pistachios (for dish decoration). Then melt the butter in a large pan, on very very low heat (butter must not fry). Cook the ravioli into the boiling, salted water for 3 to 4 minutes. Gently mix the stuffed pasta: do not use a fork, to prevent piercing.
Turn the heat off. Take half cup of the pasta water and pour into the melted butter and mix quickly. Hold the ravioli with a wire skimmer (it is better not to drain them, but to gently remove out of the boiling water) and place into the butter and water sauce. Turn them with a spatula and serve with the pistachio sauce and some chopped pistachios to decorate. Enjoy!

Español.  Llevar a hervor agua con sal. Mientras tanto, picar los pistachos restantes, que se utilizaràn para decorar el plato, derretir la mantequilla en una sartén grande, a fuego lento (la mantequilla no debe freír). Cuando el agua hierva, verter los raviolis: se cocinan en 3-4 minutos. Se agita la pasta rellena con suavidad y no con un tenedor, porque es posible que pinchàndola se rompa y salga el contenido. Apagar el fuego y tomar media taza de agua de la olla y verter en la sartèn con la mantequilla derretida y emulsionar (es decir, mezclar) rápidamente. 
Con un cucharòn, retirar los raviolis del agua (no escurrirlos porque el movimiento repentino podría romperlos) y colocarlos en salsa de mantequilla y agua: gire suavemente con una espátula, para tmen sabor. Servir los raviolis añadiendo dos cucharadas de salsa de pistacho y un poco de los pistachos picados picados. Buen provecho!
