Merluzzo con speck e topinambur


Codfish with speck and topinambur


Italiano. Avete mai provato il topinambur? Viene anche chiamato "carciofo di Gerusalemme". E' un tubero bitorzoluto che in qualche modo assomiglia alla patata, ma il sapore ricorda decisamente il carciofo. A differenza della patata, che contiene amido, il topinambur contiene inulina e ha un bassissimo indice glicemico, cosa che lo rende adatto all'alimentazione di persone con problemi di diabete. Su può mangiare crudo (al contrario delle patate), al vapore, fritto come chips, trifolato, al forno.... Costa poco e si trova comunemente nei supermercati più forniti. Tuttavia, se siete tradizionalisti e non vi va di provare nulla di "esotico", potete sostituire il pure di topinambur con dei ceci passati o dei fagioli cannellini in puré: questi legumi si sposano perfettamente sia con la delicatezza del pesce sia con la sapidità dello speck. Per questo piatto ci vogliono pochi ingredienti e poco tempo (circa mezz'ora è sufficiente). Vi va di provarlo? Bene, buon appetito allora!

English. Did you ever try the topinambur? It is also called Jerusalem artichoke. It is a knobby tuber, looking like potatoes, but tasting as an artichoke. Unlike potatoes, that contain starch, the Jerusalem artichoke contains inulin and has a very low glycemic index, so it is suitable for person with diabetes and other pancreatic problems. You can eat it raw or cook it in the oven, steam it or fry... It is cheap and easy to find. However, if you do not want to use the topinambur, you can remake this recipe substituting the tuber with some chickpeas or some white beans: the work very good with the delicacy of the fish as well as with the saltiness of the smoked ham. For this dish you need only a few ingredients and not more than half an hour of time. Do you want to try it? Well, enjoy your meal!

Ingredienti per 4 persone
(serves 4 - ingredientes para 4 personas): 
  • 600 grammi di filetto di merluzzo o altro pesce con carni sode (600 grams cod fish fillet or other - )
  • 800 g topinambur (800 g topinambur - )
  • 300 g circa di brodo vegetale o acqua (about 300 g vegetables broth or water - )
  • 12 fette di speck o pancetta o prosciutto crudo (12 slices speck or pancetta or bacon - )
  • 200 g di cipolla (200 g onion - )
  • prezzemolo o timo per decorare (parsley or thyme to decorate - )
  • olio di oliva e.v., sale, pepe nero q.b. (extravirgin olive oil, black pepper, sea salt to taste - )

Italiano. Sbucciate i topinambur. Mettete 4 cucchiai di olio in una padella, fatelo scaldare, poi aggiungete la cipolla e i topinambur entrambi affettati. Fate rosolare molto brevemente, poi aggiungete il brodo vegetale o l'acqua e una presa di sale. Fate cuocere finché il topinambur diventerà tenero. Se il brodo (o l'acqua) non bastasse, aggiungete dell'altro liquido fino a completare la cottura. I nostri topinambur sono cotti in venti minuti.

English. Peel the topinambur. Place 4 tablespoons of olive oil in a sauté-pan and turn on the heat. Add sliced onions and chunked topinambur. Cook slightly, then add vegetable broth or water, salt. Let it cook until topinambur get tender. If the broth or the water evaporate while cooking, add a bit more. Our topinambur were cooked in about twenty minutes.

Italiano. Nel frattempo, tagliate il pesce a pezzi piuttosto grossi. I nostri filetti pesavano 150 grammi l'uno: da ciascuno abbiamo ricavato tre pezzi. Avvolgete ciascun pezzettone con una fetta di speck (o pancetta o prosciutto crudo). Adagiate tutti i pezzi su una placca da forno e cuocete in forno caldo a 180°C per circa 10 minuti.

English. Meanwhile, cut the fish into small pieces. Our fillets weighed about 150 grams each: we got three pieces from each fillet. Wrap each bite with a ham slice (or pancetta or bacon). Place all the pieces onto an oven tray and cook into pre-heated oven to 180°C for about 10 minutes.

Italiano. Quando i topinambur sono cotti, passateli nel mixer fino a ridurli in puré. Adagiate una porzione di puré su un piatto e sopra appoggiateci una porzione di pesce cotto (nel nostro caso erano tre pezzi a persona). Condite con un filo di olio e un po' di pepe. Il vostro secondo leggero e saporito è pronto in mezz'ora di tempo.

English. When topinambur are done, place them into a food processor until you get a purée. Place a part of the purée on a dish and put a portion of the cooked fish on the top (we had three pieces for each dish). Season with a drizzle of olive oil and fresh ground black pepper. Your light, tasty dish is ready in only half an hour of time. Enjoy.
