Gluten free cherries cake - Torta de cerezas gluten free



English. Cherries are one of our favourite kind of fruit (maybe the most favourite!). Unfortunately their season is so short! It is so delicious to have cherries as a snack or whenever you want, especially if they are perfectly ripe, sweet and pulpy. Do you agree?
Even if we absolutely prefer fresh cherries, we decided to make a cake whit them. We made a gluten free cake because we had a friend of ours for the afternoon tea. We used only rice flour for this cake. Furthermore, we did not use butter, in order to have a tasty but light cake. 

Español. Las cerezas son unos de los frutos en absoluto màs deliciosos. Lástima que su temporada es tan corta!  Las cerezas son deliciosas para comer como un bocadillo en cada oportunidad, sobre todo cuando están maduros al punto justo, firme y crujiente en la boca. ¿Estn de acuerdo? 
Aunque las preferimos seguramente cuando son crudas, las cerezas cuando estàn totalmente maduras se prestan para ser un buen ingrediente para un delicioso pastel como el que hemos preparado para un aperitivo con un amigo intolerante al gluten: hemos, de hecho, utilizado sólo la harina de arroz . Ni siquiera le pusimos mantequilla, para que sea más ligera: un aperitivo delicioso y ligero, quieren más?




EnglishAs we live in a city, we can only buy cherries at the supermarket, and they cost a lot. If you are luckier than us, and you can buy cherries directly from the farmers, at a conveniente price, make jam to preserve the sweet flavour of the cherries as long as you can. Another way to preserve cherries is in spirits: it is a good way to have cherries when they are out of season. It’s easy: rinse and dry the cherries, place them in a jar, cover with pure 90% alcohol (grappa or rhum will work as well). On next Christmas you will offer your own cherries to your family and friends. 
But now, let’s go to make the cake!


EspañolNosotras, que vivimos en una gran ciudad, por desgracia, sólo podemos comprar las cerezas en la fruterìa y por lo tanto, cuestan bastante caro. Si tiene la suerte de poder comprar directamente de los agricultores, a un buen precio, aprovechen para hacer una buena mermelada, con el fin de preservar su sabor el mayor tiempo posible. También ponièndlas en alcohol, es una buena manera de comer cerezas fuera de temporada. Es fácil: se lavan bien, se secan y se ponen en un frasco, cubrièndolas completamente con alcohol  puro de 90 ° para alimentos (pero también se puede utilizar brandy o ron). En Navidad podràn sevir sus cerezas en alcohol. 
Pero ahora vamos a preparar el pastel!



Serves 8 
Ingredientes para 8 personas 
  • 200 g rice flour - 200 g de harina de arroz
  • 200 g caster sugar - 200 g de azùcar
  • 50 g almond flour or finely chopped almonds - 50 g harina de almendras o almendras picadas muy finamente
  • 1 teaspoon ground cinnamon - 1 cucharadita de canela en polvo
  • 16 g baking powder - 1 sobre de levadura en polvo para dulces, 16 g
  • 150 g sunflower seeds oil - 150 g de aceìte de girasol
  • 300 g whole milk - 300 g de leche
  • 2 eggs - 2 huevos grandes
  • 500 g chierries - 500 g cerezas
  • 1 lemon - 1 limòn
Difficulty: easy - Time: 1 hour and 10 minutes
Difficultad: fàcil - Tiempo: 1 hora y 10 minutos


English. First of all, wash and rinse the cherries, then pit them. If you do not have the cherries pitter, use a sharp knife: no one will notice it! 

EspañolEn primer lugar deshuesar las cerezas, , por supuesto, después de haberlas lavado. Si no tiene la herramienta adecuada para deshuesar, utilizar un cuchillo afilado: cortar por un lado, eliminar el núcleo y volver a darles la forma. Nadie se dará cuenta el corte!


English. Preheat the oven to 180°C: it has to be hot enough when the cake is ready to be baked. 
Meanwhile, grate the lemon peel. In a large bowl, sift and mix all of the powders and the lemon peel. In another bowl, combine all the liquid ingredients. 
Pour a bit at a time the mixed liquid ingredients into the powders and combine well. 

Español. Encienda el horno a 180 °C: debe estar caliente cuando se colocarà el pastel. Rallar la cáscara de limòn. Mezclar todos los polvos y la càscara de lìmon en un bol. En otro bol, mezclar todos los líquidos, huevos incluìdos.
Verter un poco a la vez los líquidos en los polvos, incorporando lentamente. 


English. Grease a cake pan and flour the surface (square cake tin 22 cm each side; round cake pan 21 cm diameter). Throw away the exceeding flour. 
Place the pitted cherries onto the bottom of the cake tin. Toss the cake batter into the pan. 

EspañolEngrasar un molde y pasarle un poco de harina de arroz: hacerla girar alrededor del molde (cuadrado: 24 cm; redondo: 21 cm de diámetro). Desechar la harina en exceso. 
Poner todas las cerezas deshuesadas en el fondo del molde y verter la mezcla encima. 


English. Bake 40 minutes to 180°C. When you notice some deep cracks on the surface the cake will probably be done. Use a wooden toothpick to test if the cake is well done: sink the toothpick and if it comes out humid but not sticky the cake is ok. Humid well done, sticky not done. 
Let the cake cool down, then sprinkle with icing sugar. Enjoy. 

Español. Hornear y cocinar a 180 °C por 40 minutos,, però depende del horno. Cuando vean que empizan a formarse grietas en la superficie, ès probable que el pastel estè listo: utilicen un palillo para comprobar, però tengan en cuenta que este pastel es siempre un poco húmedo, però el palillo de dientes no debe ser pegajoso. Hùmedo ok, no pegajoso. 
Dejar enfriar bien, espolvorear con azúcar en polvo y disfruten de su pastel!

  1. I think cherries are so special, and probably because they are only available for a couple of weeks. Once, when we were in Tuscany, we came across an elderly man and (we think) his grandson who were selling cherries on the roadside. They were so incredibly good, and it was the first time I had seen a vendor by the side of the road. Now, I always stop and buy whatever is being sold!

    Your cake looks wonderful - I will have to try it very soon! (Our batch of cherry liqueur is all set to be done for Christmas!)
