Napolitan Casatiello - Casatiello napolitano



English. As we promised (see this post) here is the recipe of a traditional italian savory tart: the Casatiello. This is not a simple recipe, this is "the one": in fact, we got it out of the official Casatiello Napoletano website  (www.casatiello.it). We only made an adjustmen: we halved the amounts. 
So, if you are going to organize a spring picnic, the Casatiello can not miss. Have a piece of it with a fresh glass of wine or bier. Everyone have a happy Easter!


Español. Como se anunció previamente (ver este post), aquí está la receta de una torta salada tradicional italiana: el casatiello. Pero no es receta cualquiera: es la receta tomada del sitio web oficial del casatiello napolitano (www.casatiello.it) pero con medias dosis. 
Entonces, si tienen programado un picnic de Pascua, el casatiello no puede faltar. Y si no van a comer un bocadillo en la hierba, no importa nada: consiéntase con un buen pedazo de torta salada y una copa de buen vino. Feliz Pascua a todos!

English. Is it right to change traditional recipes? Someone may say not. But if we only cook up to traditional rules we would never make nothing new, isn't it? So we think that yes, we can, we must. 

Español. ¿Es justo volver a elaborar las recetas tradicionales? Los puristas dirían que no. Pero si nos limitáramos con las recetas tradicionales, nunca se crearía nada. Es lógico que todos, entonces, se inspiren en sus orígenes para interpretar la cocina. Entonces sí, las recetas tradicionales pueden ser reinterpretadas.

Neapolitan Pastiera - Pastiera Napolitana



English. The Pastiera is a typical cake made in Campania (South Italy region) on Easter festivity. Actually, in the pastry shops of this region you can have Pastiera all year long and tourists do not miss the occasion to taste a slice of this delicious cake.
The Pastiera is filled with boiled wheat grains, which are the main ingredient together fresh ricotta cheese. Orange flowers water gives the cake a very special smell and a delicate, unusual aftertaste. It is an infusion of bitter orange blossoms. In Italy we use to buy pre-cooked wheat grains at the supermarket, but you can make it at home, boiling for a long time the grains with milk.

Español. La Pastiera Napolitana, es el dulce típico de la regiòn Campania para la fiesta e Semana Santa. En las pastelerías de la región, de hecho, se pueden encontrar durante todo el año y los turistas no pierden la oportunidad de probarla. Su característica especial es el trigo cocido, que es el componente principal, junto con el requesón fresco (ricota). La esencia de agua de azahar, da a la torta un perfume particular y un sabor muy delicado, inusual y agradable. El agua de azahar se obtienen de la infusión de flores del naranjo agrio o azahar. 
Hoy en día, el trigo cocido para Pastiera, se encuentra ya listo en el supermercado: si se desea, sin embargo, se puede preparar en casa, mediante la compra de semillas de trigo duro y cocinarlo (por muchas horas) en la leche.
